- 1 package Trader Joe's Salsa Verde Pulled Chicken Breast (or 1½ pounds cooked pulled chicken breast), chopped into bite-sized pieces
- 3 ripe peaches, diced small
- 4 Persian cucumbers, diced small
- 1 red bell pepper, diced small
- 2 cups cherry tomatoes, quartered
- ½ cup chopped pickled red onion
- ½ cup BIENA Sea Salt Roasted Chickpeas
- ½ cup reduced-fat or fat-free feta cheese, crumbled
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh mint
- 1 cup low-fat cottage cheese
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tablespoon balsamic vinegar

- Prepare all of the salad ingredients by chopping the peaches, cucumbers, bell pepper, tomatoes, and pickled onions into small, uniform pieces. Keeping everything roughly the same size ensures you get a little bit of everything in each bite.
- Add the chicken, peaches, cucumbers, bell pepper, tomatoes, pickled onions, roasted chickpeas, feta, basil, and mint to a large mixing bowl.
- To make the dressing, combine the cottage cheese, lemon juice, lemon zest, balsamic vinegar, Dijon mustard, honey, garlic, fresh basil, salt, and pepper in a blender or food processor.
- Blend until completely smooth. If needed, add water one tablespoon at a time until the dressing reaches your desired consistency. Be careful not to add too much water at once, as it can thin the dressing quickly.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
