This High-Protein Chicken Jalapeño Popper Flatbread is a healthier twist on the classic appetizer, featuring crispy lavash topped with a creamy mixture of rotisserie chicken, Laughing Cow cheese, light cream cheese, cheddar, turkey bacon, and fresh jalapeños. It's easy to make, packed with protein, and ready in under 25 minutes—perfect for busy weeknights, meal prep, or when you're craving pizza with a spicy kick.

Ingredients

  • 1 sheet of lavash bread
  • 6 triangles of light Laughing Cow cheese
  • 2 tablespoons of light cream cheese
  • 3 pieces of turkey bacon, chopped (separate 1 for topping!)
  • 1-1/2 cups of shredded cheddar cheese (separate 1/2 cup for topping)
  • 3 oz of chicken breast, pulled
  • 1 jalapeño, de-seeded and chopped with half sliced into coins
  • A few sprays of oil
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Lightly spray both sides of the lavash with cooking spray and place it on a baking sheet.
  3. Bake for a few minutes until the lavash begins to crisp.
  4. In a bowl, combine the Laughing Cow cheese, cream cheese, rotisserie chicken, chopped turkey bacon, chopped jalapeño, and part of the cheddar cheese until well mixed.
  5. Spread the mixture evenly over the warm lavash.
