My version, on the other hand, uses cottage cheese and Greek yogurt to bump up the protein, but retain all of the creaminess and big bursts of flavor you love from the original. It's a great source of protein and one of my favorite appetizers.

Not only that, but the chicken adds plenty of lean protein as well, and using lighter cheeses adds a little bit of extra too without causing the calorie count to soar.   • Blend the cottage cheese: Make sure you blend the cottage cheese until it’s fully smooth and creamy because it’ll give you the best texture.

  • Make it spicier: Add extra buffalo sauce after mixing your dip or consider adding a bit of minced jalapeño.

  • Add flavor: Use fire-roasted corn if you can get it. It’ll add some extra flavor. Top the dip with fresh cilantro, a squeeze of lime juice, and some fresh green onions.

  • Keep the dip warm when serving: Rather than putting the dip out in a bowl where it’ll get cold, serve your dip right from the slow cooker so you can keep it set to warm and keep the dip at the perfect temperature.

A healthier buffalo chicken dip that can be made in a slow cooker or on the stovetop in under 15 minutes? It’s the best snack for game day, holidays, or any day of the week.

Ingredients

  • 1 lb shredded cooked chicken
  • 1 packet ranch seasoning
  • 1 cup Mexican or cheddar cheese blend
  • 1 cup low-fat mozzarella
  • 2 cups blended cottage cheese
  • 1 cups plain Greek yogurt
  • ½ cup buffalo sauce
  • 1 cup frozen fire-roasted corn
  • 1 tablespoon chili powder
  • ½ tablespoon paprika
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
  • Optional: Cotija cheese, green onions, cilantro, and lime for garnish

Instructions

In a Slow Cooker
  1. Add the shredded chicken to the bottom of your slow cooker.
  2. Add the ranch seasoning, cheeses, blended cottage cheese, Greek yogurt, buffalo sauce, chili powder, paprika, and minced garlic. Stir well to combine.
  3. Pour the frozen fire-roasted corn into the slow cooker.
  4. Cover and cook on LOW for 1.5–2 hours
  5. Taste and adjust salt, pepper, or buffalo sauce as needed.
  6. Serve warm.
On the Stovetop
  1. Add all the ingredients to a large pot over medium-low heat.
  2. Stir continuously until hot and melted, 10–15 minutes.
  3. Taste and adjust seasoning as needed.
