As a nutrition and fitness coach, I'm always encouraging my clients to think beyond simply hitting their daily protein goals. The quality of your protein and the additional nutrients that come with it matter, too. That's one of the reasons I love incorporating American lamb into my meals.

Lamb is an excellent source of high-quality protein and provides essential nutrients like vitamin B12, zinc, and iron, which play important roles in energy metabolism, immune function, and overall health.

And the best part? This entire recipe comes together with simple ingredients and minimal prep, making it perfect for a nutritious weeknight dinner or meal prep.

Why I Love American Lamb as a Protein Source

When we talk about protein, we often focus on how many grams we're getting per meal. But something I remind my clients is that not all protein sources offer the same nutritional benefits.

American lamb is a nutrient-dense protein option that provides all nine essential amino acids, making it a complete protein.

Here are a few reasons why lamb deserves a place in a balanced diet:

1. High-Quality Protein to Support Muscle Growth and Maintenance

Whether you're trying to build muscle, maintain strength as you age, or improve your body composition, getting adequate protein is essential.

A 3-ounce serving of cooked lamb provides approximately 23 grams of high-quality protein, depending on the cut and preparation.

Because lamb contains all nine essential amino acids, it provides the building blocks your body needs to repair and maintain muscle tissue.

Pairing lamb with chickpeas and Greek yogurt in this recipe creates a protein-rich meal that's satisfying and delicious.

2. An Excellent Source of Vitamin B12

Vitamin B12 plays a critical role in normal red blood cell formation, nervous system function, and energy metabolism.

Unlike many plant-based foods, lamb naturally provides vitamin B12, making it a valuable addition to a varied diet.

Vitamin B12 helps your body convert the food you eat into usable energy, although consuming extra B12 doesn't necessarily increase energy levels if you're already getting enough.

3. Provides Zinc to Support Immune Function

Zinc is an essential mineral involved in immune function, wound healing, and protein synthesis.

Lamb is a naturally rich source of zinc, which makes it particularly appealing for active individuals who want to support their overall health and recovery through nutrition.

4. Contains Iron, Including Highly Bioavailable Heme Iron

Iron is essential for transporting oxygen throughout the body and supporting normal energy metabolism.

Lamb provides heme iron, the form of iron found in animal foods that is generally more readily absorbed than non-heme iron from plant foods.

This is particularly relevant for women of reproductive age, who have higher iron requirements than many other adults.

Combining lamb with vegetables like bell peppers and tomatoes also adds vitamin C to the meal, which can help improve the absorption of non-heme iron from ingredients like chickpeas.

5. Naturally Provides Beneficial Fats

Lamb also contains a variety of fatty acids, including some omega-3 fatty acids. The exact amount varies depending on the cut and the animal's diet.

While lamb isn't as concentrated a source of omega-3s as fatty fish, it can contribute to overall dietary fat intake as part of a balanced eating pattern.

Choosing your preferred cut and trimming visible fat when desired makes it easy to incorporate lamb into meals that align with your individual nutrition goals.

What Makes These Mediterranean Lamb Bowls So Nutritious?

One of my favorite things about this recipe is that it combines multiple food groups to create a balanced, satisfying meal.

American lamb: Provides complete protein, vitamin B12, zinc, and iron to support muscle maintenance and normal physiological function.

Crispy chickpeas: Add plant-based protein, dietary fiber, and a satisfying crunch. Fiber supports digestive health and helps make meals more filling.

Fresh vegetables: Romaine, arugula, tomatoes, cucumbers, and bell peppers provide fiber, vitamins, minerals, and a variety of beneficial plant compounds.

Greek yogurt: Adds additional protein and calcium while creating a creamy dressing without relying on a mayonnaise-based sauce.

Tahini: Made from sesame seeds, tahini provides unsaturated fats and adds a rich, nutty flavor that complements the lamb beautifully.

Together, these ingredients create a meal that delivers protein, fiber, fats, and plenty of flavor in every bite.

Tips for Making the Best Mediterranean Lamb Bowls

Dry your chickpeas thoroughly. The secret to getting chickpeas crispy in the oven is removing as much moisture as possible before roasting. After rinsing, pat them dry with paper towels or a clean kitchen towel.

Use a meat thermometer. Lamb loin chops can vary in thickness, so checking the internal temperature is the most reliable way to ensure they're cooked safely without overcooking.

Let your lamb rest before slicing. Resting for at least three minutes helps the meat retain its juices and gives you time to finish assembling the salad.

Don't skip the fresh herbs. Parsley and mint add a bright, fresh flavor that complements the savory lamb and creamy tahini sauce.

Keep the dressing separate for meal prep. If you're preparing these bowls ahead of time, store the yogurt-tahini sauce separately to keep the greens fresh and crisp.

Can You Meal Prep These Lamb Salad Bowls?

Absolutely! These Mediterranean lamb bowls are a great option for anyone who wants to prioritize protein without spending hours in the kitchen.

You can cook the lamb and chickpeas ahead of time, wash and chop your vegetables, and prepare the yogurt-tahini sauce in advance.

Store the cooked lamb in an airtight container in the refrigerator for up to 3–4 days. Refrigerate the dressing separately, and keep the chickpeas separate from moist ingredients to help preserve their texture.

When you're ready to eat, simply assemble your bowl and add the dressing. The lamb can be enjoyed warm or cold.

Ingredients

Lamb
  • 2 lbs American lamb loin chops, fat trimmed if preferred
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • Black pepper, to taste
  • Juice of ½ lemon
Crispy Chickpeas
  • 1 (15-ounce) can chickpeas, drained, rinsed, and patted very dry
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • Salt, to taste
Mediterranean Salad
  • 5–6 cups chopped romaine lettuce
  • 1–2 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • ¼ red onion, thinly sliced
  • ⅓ cup crumbled feta cheese
  • Fresh parsley and/or mint, for garnish
Yogurt-Tahini Sauce
  • ¾ cup plain Greek yogurt
  • 2 tablespoons tahini
  • Juice of 1 lemon
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 2–4 tablespoons water, to thin

Instructions

  1. Preheat the oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
  2. Toss the thoroughly dried chickpeas with olive oil, smoked paprika, cumin, and salt. Spread them onto one side of the sheet pan and roast for 10 minutes.
  3. Meanwhile, coat the lamb loin chops with olive oil, oregano, garlic powder, cumin, smoked paprika, salt, pepper, and lemon juice.
  4. After the chickpeas have roasted for 10 minutes, add the lamb chops to the other side of the sheet pan in a single layer. Return to the oven and roast for approximately 10–15 minutes, depending on the thickness of the chops. According to USDA guidelines, whole cuts of lamb should reach a minimum internal temperature of 145°F, measured with a food thermometer, followed by a 3-minute rest. For additional browning, broil briefly at the end, watching carefully to prevent burning.
  5. While the lamb cooks, whisk together the Greek yogurt, tahini, lemon juice, garlic powder, salt, and pepper. Gradually add water until the dressing reaches a smooth, pourable consistency.
  6. Add the romaine and arugula to a large serving bowl, followed by the cherry tomatoes, cucumber, bell pepper, red onion, and crumbled feta.
  7. Once the lamb has rested, remove the bones and thinly slice the meat. Arrange the warm lamb and crispy chickpeas over the salad, garnish with fresh herbs, and finish with a generous drizzle of yogurt-tahini sauce.

Notes

I verified the lamb nutrition and USDA cooking recommendations. A 3-ounce serving of cooked, lean lamb loin provides approximately 25 grams of protein, 2.1 micrograms of vitamin B12, 3.5 milligrams of zinc, and 1.7 milligrams of iron. Exact values vary by cut and preparation.

The USDA recommends cooking whole lamb chops to 145°F internally, followed by a minimum 3-minute rest, so that language is included in the instructions.
